Ingredients for 2 large pizza pies :
1 medium onion chopped
2 cloves garlic crushed
1 tablespoon chopped fresh basil leaves or ½ teaspoon dried basil
1 ½ teaspoons fresh oregano or ½ teaspoon dried oregano
¼ teaspoon black pepper
1 medium can tomato paste
2 cups shredded cheese – mozzarella is best but yellow cheese will do
¼ cup parmesan cheese – optional

For dough:
1 package dried active yeast
¾ cup warm water
½ teaspoon salt
½ teaspoon sugar
2 tablespoons olive oil or vegetable oil
2 cups flour

First make the sauce
Fry onion in 2 tablespoons oil until translucent.

Add the garlic and fry another minute

Add tomato paste, salt, pepper, oregano and basil

Bring to a boil, add basil and turn off the heat
You can add a little water but the sauce should be thick

Preheat oven to 400 degrees Fahrenheit

Dissolve the yeast in the warm water.
Add the sugar, salt, and oil and mix together

Add the flour and mix a few minutes

On a floured surface knead the dough into a smooth ball
Divide it into 2 balls.
Spread each ball of dough out into the shape of your baking trays

Place the dough on lightly greased baking tray
spread sauce on the top.

Sprinkle 1 cup of cheese on top of the sauce

Bake 15 to 20 minutes or when the cheese is
bubbling and the crust is brown lightly
