Separate three eggs.
Beat the egg whites until slightly foamy
Gently fold the egg yolks into the foam.

Place a non-stick pan (preferably a 10 inch pan) on medium heat and put in one tablespoon of butter.
When the butter is melted and starts to bubble, pour in the egg mixture.
When the eggs begin to be fried, fold over the ends in using a spatula.

When the omelet is just about done, fold it in the middle to put one side over the other.
* If you want to make an stuffed omelet, add the filling (cheese, mushrooms, herbs, etc.) to the center before you fold it
Remove the pan from the fire, slide the omelet gently onto a plate and serve. You can decorate the dish with finely chopped chives
