Ingredients:
1 very large eggplant
1 medium onion chopped
2 cloves garlic crushed
1 medium can of tomato paste
½ cup water
1 teaspoon sugar
½ teaspoon salt
½ teaspoon dried basel leaves
½ teaspoon dried oregano leaves
¼ teaspoon black pepper
1 container of cottage cheese
Mozzarella or yellow cheese
Flour
breadcrumbs
1 – 2 eggs
Oil for frying

Fry the onion until translucent in a sauce pan.
Add the garlic and fry another minute

Add the tomato paste, salt, pepper, oregano, basil , sugar and water
Bring to a boil. Cook for a few minutes on low heat.

Turn off heat

Slice the eggplant into about ¼ inch slices

Put 1 egg in a bowl and swill it around

Mix together 1 cup flour , ¼ cup bread crumbs, a pinch of black pepper and ¼ teaspoon salt on a plate.

Coat the slices of eggplant first in the egg
and then coat them with the flour mixture

Fry in hot oil, over medium low heat, until brown
Flip over and fry the other side

Spread some sauce on the bottom of a baking dish
Put a layer of the eggplant
Put a layer of sauce on top of the eggplant
Put ½ of the cottage chesse on top of the sauce
Put a layer of mozzarella or yellow cheese on top of the cottage cheese

Put a layer of eggplant on top and another layer of sauce, cottage cheese and yellow cheese

One more layer of eggplant and just sauce
Then sprinkle bread crumbs on top
And then cheese as shown in next picture

Bake in 350 degree Fahrenheit oven for 45 -50 minutes or until cheese is bubbly
